Baked potatoes with cottage cheese, bacon and avocado filling


Healthy and satisfying, this baked potatoes with cottage cheese filling make a delicious lunch.


potatoes (baking potatoes, washed and scrubbed)
4 sli
bacon (cut into small pieces)
avocado (small)
3⁄4 c
cottage cheese


  1. Preheat oven to 350º Fahrenheit.
  2. Pierce the potato skin of each potato a few times with a fork. Place them on a baking dish and bake for about 1 hour in the oven. When they are soft inside, take them out of the oven and, protecting your hand with an oven mitt, cut the top of the potato lengthwise. Scoop out some of the potato flesh and fill the potato shell with the filling.


  1. In a small frying pan, fry the bacon pieces on high until well browned. Remove the bacon and put it on a plate covered with kitchen paper to drain some of the fat.
  2. Cut the avocado in half, scoop out the seed and spoon the avocado flesh into a small bowl. Mash it with a fork until smooth, then stir in the cottage cheese and bacon.
