Cheese and zucchini scones

Easy recipe that is healthy for kids because it will help them replenish their energy plus a little boost of calcium from cheese and fiber from zucchini.

Ingredients

8 oz flour (self raising flour)
2 oz butter (or margarine)
5 T milk
2 oz cheese (grated, Cheddar cheese)
1 zucchini (peeled and grated)
1 pn salt

Instructions

Preheat oven to 425° F. Lightly grease a baking sheet.

In a large mixing bowl sift the flour and salt and pepper. Then add the butter in small pieces to the flour and rub in with your fingertips until the mixture looks like breadcrumbs. Make a well in the middle and slowly add the milk, cheese and zucchini. Mix well until you get a soft dough.

Place the dough onto a floured surface and knead for a minute. Press the dough to about 1/2 inch thickness and cut out rounds with a cup, mug or pastry cutter.

Place the rounds onto a greased baking sheet, about 1 inch apart, brush with milk and bake in the oven for about 10 minutes.
