Cheesy twice baked mashed potatoes

Stuffed baked potatoes are great comfort food and kids love them because they are easy to eat. This recipe is similar but with a base of  potato mash.

Ingredients

4 c potato (already cooked and mashed)
1 c cheese (Cheddar cheese, coarsely grated)
1⁄2 c sour cream
1⁄2 c cheese (Parmesan cheese, grated, reserve half of it for topping)
12 sli bacon (fried and crumbled, reserve 3 slices for topping)
1⁄4 onion (finely chopped)
1 clv garlic
1 t butter (melted)
1 c bread crumbs (dry)
  salt (to taste)

Instructions

Mix together mashed potatoes, cheddar cheese, sour cream, parmesan cheese, bacon, onion, salt, pepper, and garlic.

Spread the mixture into a greased baking dish.

Time to make the topping!  Yum.  

Mix together melted butter, parmesan cheese, bacon, and bread crumbs. Spread this topping mixture evenly over potatos in the baking dish.

Bake for 30 minutes at 350ºF or until topping is golden brown.

Notes

Using instant mashed potatoes makes this recipe even quicker, but if you have leftover mashed potatoes from yesterday's dinner those would be even better.

Add or substitute ingredients in the filling to your taste. You could add to the mashed potato cheese, sour cream and broccoli, for instance.

Variations

This recipe can be used to prepare tartiflette, a dish or potatoes, sliced very thin and boiled, baked with cheese and crispy bacon. Substitute 4 cup of potato mash with 3-4 potatoes peeled and very thinly sliced, boiled 3-4 minutes and drained. Cut the cheese into long thing strips instead of grating it.

Alterantively, you can peel and boil the potatoes, wait until they cool a little, then slice them thin.
