Chocolate crêpes

Crepes make an ideal treat or sweet dessert for kids. Prepare in advance and just add the filling before serving.

Ingredients

1 c flour
3 egg (beaten)
1 t sugar
3 T cocoa (cocoa powder or hot chocolate powder)
3 T butter (for the pan)
1 pn salt

Instructions

Shift flour, cocoa, sugar and salt. Mix in milk and eggs to a smooth batter. Leave to stand in the fridge for 30 minutes.

Heat a little butter in a pan over a medium heat. Add some batter, enough to cover the bottom of the pan with a thin layer.

Cook until bubbles appear on the surface - it should be golden on the other side - turn and cook on the other side. Set aside.

Repeat steps 2 and 3 until all the batter has been used.

Notes

Mix in 1 Tablespoon cocoa powder and 1 Tablespoon confectioner's sugar with whipped cream for a delicious filling. Add some strawberries, washed and cut into small pieces.

Crêpes don't have other secret than making a smooth batter. Pass it through a strainer to get rid of any lumps - or use a hand blender.

To make feather light crêpes, substitute 1/4 Cup milk with the same amount water - others advocate for beer in the case of crêpes for savory fillings, but that is certainly not for kids.

Persevere. The first few crêpes never come out right.Cooking perfect crêpes is just a matter of practice. Crêpes are so delicious that are worth the effort.

Once cooked, crêpes can be frozen. Allow to cook and separate with waxed paper or aluminum foil. They will keep up to two months.
