Grilled ginger, lemon, and honey chicken


Tender, juicy, flavorful chicken instead of the drier texture of plain chicken breast.


2 T
lemon juice (freshly squeezed)
2 T
soy sauce
2 T
2 T
vegetable oil (we tried sunflower oil and olive oil)
1 T
ginger (ginger root, peeled and grated)
1 clv
garlic (peeled and minced)
chicken breast
lemon (optional, cut into four wedges)


  1. In a baking dish blend together lemon juice, soy sauce, honey, ginger root and garlic.
  2. Marinate chicken in this mixture for at least 15 minutes (longer is even better!)
  3. Grill the chicken for 7 minutes per side or until no longer pink and juices are clear.
  4. Serve garnished with lemon wedges.


Marinating before grilling helps keeps the chicken from drying out for a tender and juicier result than if you just grilled plain chicken.

Chicken is a lean meat, but you can make this recipe lower in fat doubling the amount of honey and omitting the oil.

Honey can be substituted with other sweet and moist ingredient, we tried raspberry preserve, but we needed more, nearly double.

Garnish with four slices of lemon or four lemon wedges, to your taste.
