Veggie snacks are a fun and delicious way to add veggies to your kid's diet.
- Mix carrot and lettuce in a bowl.
- Slice each piece of pita bread in half and open the pockets.
- Add tzatziki, spreading the yoghurt to the sides.
- Fill up to 3/4 with the lettuce and carrot mix and top with some more tzatziki.
If you are having some trouble opening the pita bread pocket there is an easy solution. Place the halves on a piece of paper towel. Place them in the microwave on high power for about 8 seconds. Gently press to open the pocket.To open the pocket, place a pita half on a microwave safe dish or paper towel and heat on high for 8 to 10 seconds. It should open on its own or you would only need to press a little to open the pocket.Place the whole pita on a microwave safe dish or paper towel and heat on high power for 15 to 20 seconds - it would inflate like a balloon - and open a slit one one side to open the pocket - careful, it will be hot.If your microwave is too powerful and you are having problems because the bread comes out too dry, sprinkle a few drops of water over the pita bread before microwaving.Prepare your own tzatziki.
