All time favorite mac and cheese

Kids love macaroni and cheese and this one they can make all by themselves because the broth would not stick to the pan as milk does. It's much healthier than the boxed macaroni and cheese and tastes a lot better too.

Ingredients

1 cn broth (chicken or vegatable broth)
1 1⁄2 c pasta (elbow macaroni is great)
3⁄4 c cheese (shredded Cheddar cheese)
2 T cheese (grated Parmesan cheese)

Instructions

Pour the broth into a saucepan and place the pan over medium high heat.

When the broth just begins to boil, stir in the macaroni.

Bring the broth back to a boil and cook for 10 minutes or until the macaroni is tender, stirring occasionally.

Remove the saucepan from the stove but do not drain.

Stir in the cheddar cheese.

Sprinkle the Parmesan cheese over the top just before serving.

Source

Mac and cheese is a classic comfort food that has been around for centuries. The dish is thought to have originated in Italy, where it was known as maccheroni alla vecchia Bettola. It wasn't until the early 20th century that mac and cheese made its way to America, where it quickly became a popular favorite.

Notes

Trying to get your children to eat more vegetables? Have them add in broccoli or cauliflower and cheese sauce

To make broccoli mac & cheese, get a 10 oz. pouch of frozen broccoli. Cook the broccoli as directed on the package for the microwave. Stir the cooked broccoli into the macaroni before adding the cheddar cheese.

Cauliflower mac & cheese

Get a 10 oz. pouch of frozen cauliflower. Cook the cauliflower as directed on the package for the microwave. Stir the cooked cauliflower into the macaroni before adding the cheddar cheese.

For teens and students

For a richer mac and cheese, sprinkle grated cheese on top and bake in the oven for 25-30 minutes. You can do the same with broccoli or cauliflower mac and cheese.
