Bolognese sauce

A delicious Italian sauce that will turn a buncho fo spaghetti into a wholesome, reasonably priced meal. With this recipe, a kid can do it.

Ingredients

1⁄2 lb beef (ground beef)
1 onion (peeled and chopped)
1 clv garlic (peeled and finely chopped)
1 carrot (peeled and grated)
1 celery (a rib of celery, thinly sliced)
  T cooking oil (vegetable oil)
1 cn tomato (crushed tomato, 15 oz can)
1 T tomato (tomato paste)
1 broth (optional, concentrated beef stock cube, crumbled)
1 t basil (dried basil)
2 t oregano (dried oregano)
  seasoning (salt and pepper to taste)

Instructions

Heat the oil in a large pan. Add onion, garlic, carrot and celery and fry gently 3-4 minutes, until soft.

Add the ground beef to the pan and brown the meat.Pour int the canned tomato, tomato paste, stock cube and herbs. Mix thoroughly.

Bring the sauce to the boil, lower the heat, partially cover and simmer for aobout 30 minutes, stirring occasionally.

Notes

Serve with cooked pasta, about 4 oz spaghetti, dried weight, or other pasta shapes.

Substitute ground beef with vegetable protein and the beef stock cube, if using, with a vegetable one for a vegetarian Bolognese sauce.

This recipe is ideal for canning when prepared in large amounts as is common with tomato based sauces or tomato salsa.
