Breaded chicken

An easy dish that children and adults equally love.


4 pce chicken (chicken breast fillets or thigh fillets, fat trimmed)
1⁄2 c flour (all purpose flour)
2 egg white (beaten)
1 c bread crumbs (packaged)
1 t salt


Heat oven to 400º F. Oil lightly a dark colored shallow baking pan. Mix crumbs and salt in a bowl.

Pound chicken pieces between sheets of waxed paper until 1/4 inch thick.

Toss chicken pieces in flour and shake the excess, dip them in egg white an then toss them in the seasoned bread crumbs.

Place the breaded chicken in the prepared pan, in a single layer.

Bake in the oven until cooked through and browned on both sides, 20-25 minutes.

Remove from the oven and serve the breaded chicken warm.

A dark colored pan will brown the bottom side of the breaded chicken without the need to turn the pieces over half way the cooking time. If you don´t have it, turn the chicken once half way the cooking time.

Serve the breaded chicken with potato wedges and salad. Bake the chicken at the same time than the wedges.

You can also serve chicken schnitzels in a bread roll with sliced tomato and lettuce.

The breaded chicken could be fried in oil or cooked in the air fryer.

You can flavor the bread crumbs wiht a variety of condiments such as grated lemon rind, garlic salt, chopped parsley and more.

You could substitute bread crubms for crushed corn flakes or a mixture of both.
