Broccoli pesto

Looking for a delicious and healthy pasta sauce? Try broccoli pesto. This recipe is perfect for any type of pasta, and it's easy to make.

Ingredients

3 c broccoli (broccoli florets and cut stem, about 1 head)
4 stk herbs (optional, basil or parsley)
1⁄2 c cheese (Parmesan or another hard cheese, coarsely grated)
1 clv garlic (peeled)
4 T olive oil
1 T juice (optinal, lemon juice)
1⁄3 c pine nuts (or other nuts coarsely chopped)
  seasoning (salt and pepper to taste)

Instructions

Steam the broccoli until it begins to soften but it is still green and resistant to the bite, 3-6 minutes.

Place the steamed broccoli in a food processor with basil, Parmesan cheese, garlic, olive oil and lemon juice.

Pulse until blended, then season with salt and pepper to taste.

Notes

You can blanch the broccoli 4-8 minutes in boiling water.

Use any kind of nuts you prefer. Almonds, walnuts and hazelnuts also go well.
