Cornbread

A side dish that kids love and that they can help to bake.

Ingredients

1 1⁄4 c cornmeal
1⁄2 c flour (all purpose flour)
1⁄4 c flour (whole wheat flour)
1⁄4 c sugar (brown sugar)
1 egg (beaten)
1 c milk
3 T cooking oil (vegetable oil)

Instructions

Heat oven to 425° F.

Grease or line an oven pan. A 9 inch square pan is good.

Sift cornmeal, flour, baking powder and salt in a large bowl and mix with sugar.

Add beaten egg, milk and vegetable oil, beating until you get a smooth dough.

Place dough in the prepared pan and bake for 20-25 minutes.

Notes

You can use the dough to make muffins. Just prepare a muffin pan and bake for 15 minutes.

If sifting flour becomes too messy, omit this and just mix cornmeal, flour, salt and baking powder with the sugar.

Even pre-school children can measure the ingredients and add them to the bowl, and they can help to distribute the dough if making muffins. School age children will be able to do all the mixing and preparing the pan.
