Ingredients

1 c butter
2 c sugar
1 c banana (mashed brown speckled bananas, 1 large banana)
3 1⁄2 c flour (all purpose flour)
1⁄2 t salt

Instructions

Heat the oven to 375° F.

Cream together the butter sugar and vanilla, adding the bananas and beat until well combined.

Shift together the flour, baking powder and salt. Add a bit of the banana mix, beat well and add another addition. Beat well after each time you add the banana. Dough will be sticky.

Divide into four parts. Place one part on each one of the four sheets of wax paper. Wet hands and form dough into long rolls, about 1 inch in diameter.

Wrap the rolls with the wax paper and place in the fridge until firm.

Use a serrated knife to cut into 1/2-inch thick slices. Place 2 inches apart on an oiled cookie sheet.

Bake for 10 minutes or until the edges just begin to brown. They will burn if not careful.

Cool on rack, serve or store in airtight container.
