Grilled ginger, lemon, and honey chicken

Tender, juicy, flavorful chicken instead of the drier texture of plain chicken breast.

Ingredients

2 T juice (freshly squeezed lemon juice)
2 T soy (soy sauce)
2 T honey
2 T cooking oil (vegetable oil)
1 T ginger (fresh ginger root, peeled and grated)
1 clv garlic (pelled and minced)
1 1⁄2 lb chicken (4 chicken breast pieces)
1 lemon (optional, cut into 4 wedges)

Instructions

In a baking dish blend together lemon juice, soy sauce, honey, ginger root and garlic.

Marinate chicken in this mixture for at least 15 minutes (longer is even better!)

Grill the chicken for 7 minutes per side or until no longer pink and juices are clear.

Serve garnished with lemon wedges.

Notes

Marinating before grilling helps keeps the chicken from drying out for a tender and juicier result than if you just grilled plain chicken.

Chicken is a lean meat, but you can make this recipe lower in fat doubling the amount of honey and omitting the oil.

Honey can be substituted with other sweet and moist ingredient, we tried raspberry preserve, but we needed more, nearly double.

If the soy sauce used is gluten free, this recipe will also be gluten free. Check the list of ingredients.

Garnish with four slices of lemon or four lemon wedges, to your taste.
