You can make great sandwiches out of pita bread. Warm them, cut them into pockets and fill them with nearly anything you like.
Warm the pita bread under the broiler, in the oven, or one by one in the microwave oven. Cut them in half to make to pockets.
Put 2 tablespoons sauce at the bottom of one pita pocket. Fill with a few salad leaves, 1 slice cheese, 1 slice ham, 4 cherry tomato halves. Fill the other pita pockets the same way.
Eat now or wrap in a sustainable sanwich bag, parchment paper, foil or plastic wrap and refrigerate until needed.
To open the pocket in the microwave oven, place a pita half on a microwave safe dish or paper towel and heat on high for 8 to 20 seconds. It should open on its own or you would only need to press a little to open the pocket.
