Sausage rolls

Sausage rolls are a delicious pastry dish that can be enjoyed as an appetizer or main course, and they are also great party food. The sausage filling is seasoned with onion, herbs, breadcrumbs and egg.


1 lb sausage (sausage mix or sausages with the casing removed)
1 onion (medium sized, finely chopped or grated)
3⁄4 c bread crumbs (dry bread crumbs)
1 egg (lightly beaten)
1 t herbs (mixed dry herbs)
2 pce pastry (already rolled , each pstry sheet cut in half)


In a bowl, combine the sausage mix with the onion, herbs, breadcrumbs and the egg. Mix well.

Divide the sausage mixture into 4 portions. Shape each portion into a sausage form being, the same length as the long side of the pastry rectangles.

Heat the oven to 350º F.

Place one sausage log on each pastry rectangle. Brush edges of the pastry with a little water and roll the pastry over the sausage meat. Press the edges to close the sides of the pastry roll. Cut each pastry roll into 3 pieces, opening 2 slits on top.

Place the sausage rolls on an oiled oven tray. Brush the top lightly with water. Bake the sausage rolls until cooked through, about 25 minutes.

Remove the sausage rolls from the oven when they are ready and let them cool a little before serving.

Use puff pastry or shortcrust pastry, as you prefer, to make the sausage rolls.


Sausage rolls are essentially sausage meat wrapped in puff pastry. There are many different ways to make them. Some recipes use shortcrust pastry, while others use puff pastry. Some sausage rolls are made with pork sausage meat, while others use beef, lamb, chicken or turkey sausage meat. There are even vegetarian sausage rolls.
