Apple sauce with cinnamon
Tasty and healthy, serve for breakfast, as a sauce for dessert. Serve, warm or chilled, with vanilla ice-cream or vanilla yogurt.
Ingredients
4 pounds apple (cooking apples such as Golden Delicious, Granny Smith, McIntosh)
1 tablespoon peel (lemon peel, fine strips)
1 cinnamon (1 stick 3 inch long)
4 tablespoons juice (fresh lemon juice)
1⁄4 cup sugar (brown sugar, the darker, the better)
1⁄8 cup sugar (whie sugar, might be less)
1 cup water
1 pinch salt
Instructions
Peel, core and cut the apples into small chunks. Place all ingredients into a large pot and cover. Bring apples to a boil, lower the heat and simmer for about 30 minutes.
Remove from heat and discard lemon peel and cinnamon stick. Mash the apples with a potato masher until smooth.
