Baked potato with cottage chese

A baked potato with cottage cheese is the perfect comfort food. The fluffy potato is baked until golden brown and topped with creamy cottage cheese. Serve with a side of green veggies for a complete meal.


4 potato (Russet potatoes or baking potatoes, rinsed and scrubbed)
2 c cheese (cottage cheese)
5 T chives (chopped fresh chives)
  seasoning (salt and pepper to taste)


Heat the oven to 400º F (gas) or 350º F (fan)

Pierce the potatoes a fe times with a fork.

Place them on a baking dish and bake directly on the middle shelf of the oven until golden and crisp on the outside and soft inside, about 1 hour to 1 hour 15 mins.

Meanwhile, mix the cottage cheese with the chives and season to taste.

Get the potatoes out of the oven when ready. Cut the potatoes open.

Serve topped with the cottage cheese mixture and an scatter the rest of the chives over, if you like.

You can cook the potatoes in a microwave oven. A medium potato will need 3-4 minutes at 800 w.

Microwaved potatoes don´t get crispy and golden. You could cook the potatoes in the microwave until soft, about 3 minutes at 800 w, and finish them in the oven, 20-30 minutes.

Baked potatoes with cottage cheese are low in fat.


Substitute chives with other herbs, or add other herbs to taste.

Substitute chives with chopped spring onion or add other vegetables like cooked sweet corn or chopped cucumber.
