To open the pocket, place a pita half on a microwave safe dish or paper towel and heat on high for 8 to 10 seconds. It should open on its own or you would only need to press a little to open the pocket.

Alternatively, place the whole pita on a microwave safe dish or paper towel and heat on high power for 15 to 20 seconds - it would inflate like a balloon - and open a slit one one side to open the pocket - careful, it will be hot.If your microwave is too powerful and you are having problems because the bread comes out too dry, sprinkle a few drops of water over the pita bread before microwaving.

Prepare your own tzatziki.
